A possible approach
It is plausible that travelers, expatriates and residents of countries with limited official app catalogs regularly hit this friction and already resort to VPNs or account region changes. If so, the addressable need is largely already served by existing commercial VPN and alternative-store businesses, however imperfectly.

How many people who hit this friction are unable to resolve it with existing VPN or alternative-store workarounds, versus how many already do so successfully.
Whether a specific narrower niche exists — a particular country, app category or user group — that is still underserved.

Arguments against
A mature commercial market already exists around this problem: VPN services and VPN routers are widely sold specifically to solve regional access, and alternative app stores actively market region-locked access.
Attempting to route around app-store geo-restrictions risks violating platform terms of service and, depending on jurisdiction, local law.
Could one person with AI build it?
Not favorable: the direct solutions to this problem are already commercially served, and building a competing or complementary product risks running into the same platform-policy and legal exposure that limits how openly such tools can be marketed and supported.
